(a)    Completed:

 

(1)    Efficacy of low cost substrates (such as tiger nut bambara nut and coconut extracts) were used for the production of Exopolysaccharide by yeasts isolated from some fermented foods. Bambara nut extract supported the highest production by Pichia species.

 

(b)    In Progress: 

 

(1)           Production and characterization of Exopolysaccharides by mutant and immobilized lactic acid bacteria from fermented foods.

(2)           Production and biotechnological application of lignases from higher fungi.
